Sausage Rolls
What can be tastier than a sausage roll straight from the oven? These are packed with vege goodness, and you can pretty much substitute any veges, and even 1/4 cup of cheese.
1/2 kilo pork mince
2 carrots, grated
1/2 zucchini, grated (and liquid squeezed out)
1/2 capsicum, diced or grated
1 onion, diced or grated
1 garlic clove, minced
3 mushrooms, finely diced
1/4 cup herbs, leaves torn or chopped small
1 egg
salt, pepper
3 or 4 squares frozen puff pastry
1 extra egg, beaten
Preheat oven to 200C
Mix all ingredients except puff pastry and extra egg until sticky and well combined
Cut a square of pastry in half, spread filling along one edge
Brush other edge with egg and roll up so the edge is on the bottom of sausage roll
Cut in whatever size you want - I usually cut them in 4, and place on baking paper covered baking tray
Repeat with the rest of pastry and fillings
Brush tops with beaten egg
Bake for 20-30 mins until puffed and browned. Enjoy!
