Rice Paper Rolls

Who doesn’t like a rice paper roll! Super easy for the kids to make for dinner or school lunches. Just remember anything with rice in it needs to be kept cold, so pack those ice packs! You can also add any meat you might have on hand if you want a bit more protein.

  • 1 large carrot, grated peeled or cut into thin strips

  • 1 capsicum, cut into thin strips

  • 1/2 cucumber, cut into thin strips

  • 1/2 zucchini, cut into thin strips

  • 8 snow peas, finely sliced

  • 4 mushrooms, sliced

  • 2cm ginger, finely grated

  • coriander & mint, sliced or ripped into small pieces

  • 1/2 packet rice noodles, rehydrated

  • 2 Tbsp soy sauce

  • 2 Tbsp lime juice

  • rice paper sheets

Mix all vegetables and herbs with then ginger, lime juice and soy sauce in a bowl

Have your rice needles ready to go, and a bowl of warm water

Pop your rice paper in the warm water for 10 seconds, shake excess water off and put on a plate or the (clean) counter. Do not put on a wooden chopping board - it will soak up the water and you won’t be able to roll your rice paper!

On the bit of rice paper closest to you add a small amount of noodles, then some veggies on top

Roll the rice paper away from you so that the veges and noodles are just covered

Pick up one side and fold over the end, repeat with the other side

Roll the rest of the rice paper away from you, while holding it tight and you should get a perfectly rolled rice paper roll!

Repeat with remaining sheets

*If you don’t want to put the sauce in with the veges, you can use it as a dipping sauce instead!
