Lemon & Lavender Cupcakes

They sound weird, but they’re not! Just don’t use too much lavender or they’ll taste like your Grandmas soap! Just a little bit adds an extra element. Sprinkle a tiny bit on your icing as well, for super cute cupcakes. This makes 6 - 8 cupcakes, so double or triple the recipe as needed!

  • 1/4 cup sugar

  • 1/2 tsp lavender

  • zest of 1/2 lemon

  • 55g butter, softened

  • 1 egg

  • 1/2 tsp vanilla essence

  • 2/3 cup SR flour

  • pinch salt

  • 4 Tbsp lemon juice

  • 1/4 cup milk

Preheat oven to 180C, and put paper patty cases into cupcake pan

Measure sugar, lavender and lemon zest into bowl. Rub together with your fingertips (this will release all the oils & flavour of the lavender and lemon zest into the sugar)

Add butter and mix well until creamed and soft

Add egg and vanilla to butter mix and stir until combined

Add all other ingredients. Don’t mix until they are all in the bowl, and then only mix until they are only just combined (if you overmix, you’ll get tough cupcakes)

2/3 fill patty cases and bake for 12-15 mins until cooked

To make icing: mix in small saucepan 20g butter, 1 cup icing sugar and juice of 1/2 lemon until melted. Ice cupcakes
